Holy crap...  I think it works now!

Changed the OWA line to this:

https://exchange.somedom.com:443/exchange

Set it to use Plaintext authentication, and now I'm able to see all my 
folders on the Exchange server!  Well, almost all the folders, anyway. 
I seem to remember seeing the Public Folders in my earlier version of 
Evolution, too, but they aren't there now.

At least things are progressing...
