For recording from YouTube, I recommend downloading the video using
something like KeepVid (http://keepvid.com/), and then extracting the
audio from it by running it through ffmpeg.

For good results:
From KeepVid, choose the MP4 version to download.
ffmpeg -i input.mp4 -sameq -o output.mp3
