Regarding the laptop install fest:
Audio: Do you want to edit sound? How important is reliability? The
reason I ask is because there are a number of times when I have opened
Audacity, I get an error message that the sound port is not available.
I've never investigated the cause of the problem, because if I really need
it, a re-boot or logout and log in as a different user can clear it up.
But if you want a normal user, this could get very irritating.
I seem to always be able to play any sound using VLC.
Movie player for playing mpegs is fun, because it gives you a light show
while it is playing an audio file. But if you don't have all the codecs,
that might also cause irritation.
If you are going to install Adobe's Flash and .pdf reader, you don't need
Evince. (Brace for storm of protest!!!)
Don't know if you want to do anything with pictures. I would include Gimp.
For an example of what you can do with it, look at

It is just a simple .gif image, but I think it looks nice.
I would include the whole OpenOffice.org suite.
I would include Thunderbird for the email client.
I don't know what your plans for the laptops are, but I would include the
print drivers. This part might get a little messy because you don't know
what printers the users will be connecting to. It took me a little while
to figure out the correct drive to use for my Epson all in one printer,
and the color is still a little off. One of these days I will have to
educate myself on tuning for the color printer. Also I don't use the
scanner part on my Ubuntu, dropping back to my (Ug XP) for that.
I would include Skype, downloaded from Skype, if the laptops will handle a
headset/microphone combination.
Are all the machines identical?
I don't use instant messaging. There is a Gaim instant message tool
provided with Ubuntu. I use gmail chat function.
