The kernel can log Oopses, but panics are a lot harder.

Your best bet is try booting without X running. (i.e. in single user
mode.).  Then, at least, you'll see what the error is.

It's also to get such errors logged to a printer, but I don't know if
Ubuntu has that support compiled into the kernel.
