Are you looking at 64-bit or 32-bit?

32-bit, you'll need to install the large memory kernel 

	In Ubuntu its the "server" kernel.

	In Debian its the "bigmem" kernel.

I am unsure of RPM based ones... but RedHat used to have "bigiron" or
"ent" kernels.


If the processors are 64-bit capable (I don't know/remember about
Pentium IIIs), a 64-bit Linux should just see it.

Since this is a "server" I am assuming you won't need things like flash
and java browser plugin and adobe-reader etc... I'd just install the
64-bit  version of you chosen Distro (provided the processors are 64-bit
capable)
