Its called EFI or Extensible Firmware Interface.

As Intel puts it: It's the FEWCHOOR!

Apple has used it for quite a while now. It allows them to use different
tools for booting and other things such as Targeted booting from
external drives or a network card or a CD or DVD or even (if equipped)
and X-Serve array.

It is by no means ANYTHING like BIOS, as BIOS has tremendous
limitations.
