Sounds like the root question is not how to edit files but how to
deploying code.  For that, they probably should be editing locally
(using Atom or whatever they want) and then deploying (e.g.
quick-and-dirty rsync over ssh).  Throw in git for easy reverting.
On-site editing of code, configurations, settings, etc. should
probably be discouraged.
