Ya.  Just did it today with the videos from the event I went to Sunday.

There's a really good O'Reilly book called Linux Multimedia Hacks.  One 
of the authors came to Penguicon a couple years ago and did a demonstration.

You need:
tovid - a set of tools that will re-encode your videos into the format 
that DVD players want
dvdstyler - Lets you create menus and such and will create the ISO to burn.
